Before Year End - Week 3 (09/12/2018)

Good evening all and welcome to week 3 of Before Year End.

Thinking about this goal of mine, guys I have been trash in this journey, but I am 1000% going to try harder this week and for the future. I had a really good week in terms of dinners and meal prepped my lunches also. I only fell short on breakfasts and on the weekend and that was mainly because mother nature had knocked on my door this week and I was NOT in the mood for porridge in the mornings. I've changed gyms this week so hopefully I'll have a much more successful week ahead.

Tonight I've just got a quick blog post to show you a couple of dishes I cooked. Feel free to try these dishes out for yourself!

Beef Stir fry 

Ingredients:

  • 500g of Diced Beef 
  • 3 Nests of Wholewheat Stir fry Noodles 
  • 1 Packet of Stir Fry Vegetables 
  • 1 Tbsp Soy Sauce 
  • 1 Tbsp Chinese Five Spice 
  • 1 Tsp Garlic Granules 
  • Salt & Pepper (to taste)
  • 1 Tbsp Chilli Flakes 
  • 1 Cube of Magi 

Method
  1. For the best results marinade the Beef in Soy Sauce, Chinese Five Spice, Garlic, Salt, Pepper, Magi and Chilli Flakes over night. 
  2. Put 1 Tbsp of oil in a non-stick wok and fry the beef until cooked through.
  3. Add Stir fry vegetables and a dash of Salt and Soy Sauce. 
  4.  Allow to cook for 5 mins. 
  5. Add cooked Stir fry noodles. 
  6. Allow to cook for 2 mins. 
  7. Serve
This dish was so quick to make and really tasty. I'd 100% recommend this meal as an easy mid week dinner!


Suya Chicken with Rice and Beans


Ingredients:
  • 1 Chicken Quarter (Washed) 
  • 1 Cube Maggi 
  • Salt and Pepper (to taste) 
  • 1 Tbsp Suya Pepper 
  • 1 Tbsp Chilli Powder 
  • 1 Tsp Curry Powder 
  • 1 Tsp Garlic Granules 
  • 2 Tsp Thyme
  • 1 Can Mixed Beans 
  • 1 Cup of Brown Rice (Cooked) 
  • 1 Medium Onion (Chopped) 
  • Baby Carrots 
  • Green Beans 
Method:
  1. Marinade the Chicken with 1 Tbsp Rapeseed oil, Maggi, Salt and Pepper, Suya Pepper, Chilli Powder, Curry Powder, Garlic Granules and Thyme. 
  2. Place in the oven for 30 mins at 200 Degrees Celsius. 
  3. Lightly fry the Onion in a Shallow Pan for 3 mins. 
  4. Add the Mixed Beans, slightly draining a little of the liquid before adding to the pan. Allow to cook for 5- 8 mins or until the Beans are soft. 
  5. Add Salt, Pepper and 1 Tsp of Thyme. 
  6. Add cooked Brown Rice, combining all the ingredients in the pan. 
  7. Allow to cook for a further 5 mins. 
  8. Serve with boiled Baby Carrots and Green Beans. 
This meal was too delicious, and honestly it was the first time I've cooked this combination together. After eating this, it definitely won't be the last! The beans are super nutritious and although brown rice can be a pain to cook, it tasted exactly the same as white rice when cooked as above with the beans. A pro tip to save time mid-week would be to cook the brown rice on Sunday night and place it in the fridge ahead of the week. This cuts down cooking time of this meal drastically and we all know a quick meal after a long day of work leaves more time for that much needed relaxation!
