The University Survival Guide Trilogy Presents: "Account Balance: £-0.50"- Gourmet Indomie
It's mid march. Your last loan was in January, and after rent was subtracted, money is a bit tight. You're sitting at home feeling like Elijah in the great drought. What should you eat? You open your cupboard and squint your eyes. Far in the back, behind the array of seasonings and dented tin of baked beans shines a lone packet of Indomie. Suddenly you are Daenerys Targaryen watching her dragons hatch- full of hope for the future ahead.
In this final instalment of the University Trilogy, I bring to you, Gourmet Indomie! Inspired by Asian flavours and a popular dish- ramen, this meal is not only insanely delicious, but comes in at a seriously cheap price point! Chicken and noodles with vegetables served in a warming broth makes for the perfect filling dinner. This recipe is best eaten on the day and is for one person, however can be split into two smaller portions.
Ingredients:
Main Ingredients:
- 1 Chicken Breast (If you don't have chicken breast use any protein you have!)
- 4 Broccoli Florets
- 1/4 Packet of Vegetable Stir Fry
- 1 Packet of Indomie
- 2 Chicken Maggi Cubes
- 2 Cloves of Garlic
- 2 Tbsp. Light Soy Sauce
- 1 Onion (not pictured)
- 1 Egg (not pictured)
- 900ml Boiling Water
Optional extras:
- Wedge of Lime
- Corriander
- Crushed Chillies
Method:
1. Slice up your chicken breast and in a little oil cook it adding your garlic, and any seasoning you have in your cupboard. I added a little curry powder, chicken seasoning and of course, salt and pepper. Meanwhile, boil an egg.
2. When the chicken is nearly cooked, add your sliced onion. Allow to cook fully then remove the chicken into a separate bowl leaving the onions in the pot.
3. Reduce the heat of your pot to low, then your water, increasing the heat to medium after this.
4. Add your Indomie. In the packet there should be a seasoning/chilli packet. Add half the seasoning and all of the chilli. Following this add your two Maggi cubes.
5. Before the noodles fully cook, add your broccoli, vegetables and soy sauce.
6. Plate up your dish, adding your sliced chillies on top (to your heat preference), the chicken and boiled egg. I garnished with a lime wedge, coriander and crushed chillies to add a nice acidity to the broth and heat to the dish.
