The University Survival Guide Trilogy Presents: "He's Coming Over"- Mac & Cheese w/ BBQ Chicken

So with Valentines day coming up, I thought it best to introduce the meal cooked when the guy you've been talking to for a while comes over for the first time. You don't want to cook something too hard because you don't know if you even care like that yet. But you've got to play it safe with something most people love. That's right ladies... THE front runner, THE staple: Mac & Cheese with BBQ Chicken! *(DISCLAIMER: Being wifed cannot be guaranteed with this meal, CCC holds no liability in failed relationship ventures, see Terms and Conditions for more information)*

This is the second and long sought after instalment of the University Trilogy with the price point of this recipe rated at a medium. Mac and Cheese is a relatively easy and straight forward recipe to make and well BBQ Chicken only really requires a good BBQ Sauce and basic seasoning knowledge. This meal is great to be reheated after a long day at Uni; its the gift that keeps on giving. Stay tuned for the final installation in this Trilogy!





Ingredients:

Serves 3: (Optional Extras not Included)
Total Price of meal excl. seasoning: £8.54 (Based on ASDA's prices on 12/02/17)
Total Price of meal excl. seasoning per person: £2.85
Estimated Price of meal incl. seasoning per person: £3.85

Main Ingredients:
For BBQ Chicken:
  • 6 Chicken Drumsticks
  • 4 Tbsp. Heinz (or your favourite brand) BBQ Sauce
  • 2 Tbsp. Chicken Seasoning
  • 1 Tsp. Black Pepper
  • 1 Tbsp. Curry Powder
  • 2 Tsp. Salt
  • 2 Tbsp. Soy Sauce
  • 2 Cubes Maggi
  • 2 Tbsp. Honey
For Mac & Cheese:
  • 350g Macaroni (or roughly 3/4 of a 500g pack).
  • 568ml (1pint) Semi- Skimmed/ Full Fat Milk
  • 100g Plain Flour
  • 200g Butter (Salted/Unsalted)
  • 200g Cheddar Cheese
  • 200g Mozzarella Cheese
  • 1 Small Onion
  • 1 Tbsp. Salt
  • 1 Tbsp. Pepper
  • 3 Tbsp. Breadcrumbs
Optional extras:
  • Plantain
  • Salad
  • Coleslaw

Method:
1. Boil the macaroni according to the instructions on the packet

2. Boil the chicken drumsticks in enough water to cover them. Add the chicken seasoning, curry powder, salt, pepper, soy sauce and Maggi cubes into the pot and cook for about 20mins or until cooked through.

3. In the meantime, melt the butter into a pot and add the flour creating a thick roux.
4. Add the milk, salt and pepper using a whisk or spatula to stir the mixture until the roux has dissolved.
5. Add the cheese to the mixture, forming a thick cheese sauce.
 6. Add the cooked macaroni to the cheese sauce, mixing well and ensuring every noodle is coated.

7. Add the mac & cheese to a baking tin then sprinkle the breadcrumbs and a little leftover cheese on top.
8. Cover the cooked chicken with BBQ sauce and transfer both the Mac & Cheese and BBQ Chicken into a 180 degree oven. Cook the Mac & Cheese for 20 Mins or until golden and bubbly. Following this, grill the BBQ chicken for 5mins until brown.


9. Add your optional extras... I fried up some plantain and added salad and coleslaw to the dish. After this picture I added the gravy from the chicken to act as a sauce, however customise this dish to your own preference! Garlic bread, sweet potato fries, be creative its up to you!
