The University Survival Guide Trilogy Presents: "Loan Just Dropped"- The Ultimate Surf & Turf

Lets set the scene... Its the end of September and you've just received a text. Its from your favourite person; Student Finance England. It reads "Your money will arrive in your bank account within 3 working days..." Suddenly you stop munching the biscuit you've professed as your dinner and open up ASDA's online shopping. Its time to EAT RIGHT ladies and gentlemen!



Chrissy's Cooking Chronicle's presents to you its first recipe in its University Trilogy. I aim to bring you three different meals with three different budgets for the rollercoaster of financial stability we go through as students. The Ultimate Surf and Turf includes the two main proteins I believe are easy for students to get a hold of at their local supermarket, but still quite expensive considering. The Salmon is the "Surf" (Seafood) and the Steak is the "Turf" (Land Animal) and together the flavours in this dish leave you wanting more. But be warned, this meal is not an everyday luxury as before you know it, that same biscuit I mentioned earlier- will become your dinner yet again. Stay tuned for more recipes in this Trilogy!




Ingredients:
Serves 3: Main Ingredients Only (Seasoning not included)
Total Price of meal excl. seasoning: £12.51 (Based on ASDA's prices on 10/10/16)
Total Price of meal excl. seasoning per person: £4.17
Estimated Price of meal incl. seasoning per person: £7.17
Main Ingredients:
  • 900g Baby Potatoes
  • 150g Green Beans
  • 225g On the vine Cherry Tomatoes
  • 1/2 Head of Broccoli
  • 2 Onions
  • 2 Fillets of Salmon
  • 3 Beef Medallion Steaks (or your favourite cut of steak)
  • Beef Gravy (Not Pictured)
Seasonings:
  • 5 Tbsp. Olive Oil
  • 3 Tsp. Butter
  • 1 Tsp. Garlic Granules (or 2 cloves of freshly minced garlic)
  • 2 Tbsp. Crushed Chillies
  • 2 Tsp. Black Pepper
  • 1 Tbsp. Salt
  • 2 Bay Leaves
  • 1 Tsp. Curry Powder
  • 1 Tsp. Thyme
  • 1 Original Maggi Cube
  • 1 Chicken Maggi Cube
  • 3 Tbsp. Peri-Peri Sauce
Additional:
  • 3 Skewers

Method:

1. Place the steaks in a resealable plastic bag adding: salt, 2 Tbsp. oil, garlic, 1 Tbsp. crushed chillies, 1 Tbsp. black pepper, salt, thyme, curry powder, bay leaves and both Maggi cubes. Leave the sealed steaks in the fridge to marinade for anytime between 30mins - overnight.


2. Cube the salmon and onions.





















3. Put the peri-peri sauce in a small bowl and add your remaining black pepper and crushed chillies. Mix well. Skewer your salmon and onions alternating them, and coat with the peri-peri sauce mix.
4. Place in the middle of your oven at 180 degrees (c), and cook for 15-18mins.

5. Half the baby potatoes and cover them with enough water to just cover the top and season with salt and pepper. Boil on medium-high for 15-20mins checking on them periodically. They are ready when you can easily poke a fork through one.

6. Cook your steaks with the remaining Olive Oil to your preference. I like my steak medium-well, however my guests liked theirs well done so I opted for that. Try and manage the heat keeping it on medium/ low as the steaks can burn quickly if well is your desired doneness.
7. Cook the green beans on a low-medium heat in butter until tender, adding salt and pepper to preference. During this time, use the microwave to cook the broccoli, placing them in a bowl with a little water on high for 5mins.

8. Make the gravy according to instructions on the packaging. I used Bisto gravy which took 5mins and was the perfect addition to the potatoes and steak. Plate up all the cooked food and enjoy!
